Chocolate Peanut Butter Fudge Cake

Chocolate Peanut Butter Fudge Cake
This is a super-fast and easy, extra yummy cake that anyone can make and everyone should make!  It is a great recipe because all of the ingredients are easily kept on hand. It's perfect for an informal birthday cake or for Sunday dessert.  It's delicious hot right out of the oven with the warm, gooey icing rolling down the sides but it is just as delicious eaten cold.  It's perfect with a big scoop of ice cream to go along side, but just as good without.  Any way you slice it, it's a favorite "go-to" chocolate cake!   

2 cups flour
2 cups sugar
1 teaspoon baking soda
1 cup butter
4 tablespoons cocoa powder

1 cup water  
½ cup buttermilk or plain or vanilla yogurt
2 eggs, beaten
1 teaspoon vanilla
½ cup creamy peanut butter

Grease and flour a 9x13 inch baking pan.  Preheat oven to 350 degrees.  In a large bowl, combine flour, sugar and soda.  In small saucepan bring butter, cocoa, water and buttermilk to a boil.  Pour over dry ingredients and mix well with a wooden spoon.  Add eggs and vanilla and stir.  Pour into prepared pan.  Bake for 25 minutes or until cake loosens from sides of pan.  Remove from oven and cool 10 minutes.  Spread peanut butter on top of warm, not hot cake.  Frost with Fudge Frosting when cake has cooled a little or completely cooled.  Serve with a big scoop of favorite ice cream.

Fudge Frosting

½ cup butter
4 tablespoons cocoa powder
6 tablespoons buttermilk or plain or vanilla yogurt
3 cups powdered sugar
1 teaspoon vanilla

In saucepan bring butter, cocoa and buttermilk to a boil.  Then stir in powdered sugar and vanilla. Mix well.  Pour warm icing over warm or cooled cake.
