Peanut Butter Bars




Peanut Butter Bars

My friend Tiffany Walker shared her recipe for these incredibly yummy peanut butter bars. We've been making these for years now and everyone always asks for the recipe.  Peanut butter bars were one of the best things about elementary school.  They are one of my kids absolute favorites.  However, you're never too old for chocolate and peanut butter!  Right?   These are definitely reminiscent of the good old days, but even better.  Peanut Butter Bars can be served as a dessert with a big scoop of vanilla or chocolate ice cream on top!  These are sinful!

¾ cup butter
¾ cup sugar
¾ cup brown sugar
¾ cup creamy peanut butter
2 eggs
½ teaspoon vanilla
1 ½ cup flour
1 ½ cups oatmeal
½ teaspoon salt
¾ teaspoon baking soda

In electric mixer, cream butter, sugar, brown sugar, peanut butter, eggs and vanilla.  In separate bowl stir dry ingredients together.  Add dry ingredients to creamed mixture. Mix well.  Press into bottom of 13 X 18 inch rimmed baking sheet. Bake at 350 degrees for 12-15 minutes. Remove from oven.  Let sit a few minutes.  Drop 7 tablespoons peanut butter over hot crust and spread into a smooth layer. Let cool completely. Meanwhile mix chocolate icing.

Chocolate Icing

1/3 cup canned milk (substitute with regular milk if needed)
½ cup butter
1/3 cup coco
1 teaspoon vanilla
4 cup powdered sugar

In electric mixer mix all ingredients until smooth and creamy. Spread over cooled peanut butter layer. Cut into squares.
